Fried Rice

 

INGREDIENTS 

  • 2 cups cooked rice, a day old
  • 1/3 cup pork roll, cut bite size (optional)
  • 1/3 cup bbq pork, cut bite size (optional)
  • 1 tablespoon cooking oil 
  • 1 tsp fried garlic oil, Condimengs 
  • 1 tsp sweet soy sauce
  • 1 tsp seasoning soy sauce
  • 1 tsp chicken bouillon 
  • 1 egg
  • 1/4 tsp black pepper 
  • 1 tablespoon green onion, chopped
  • 1 tablespoon fried shallots, Condimengs for garnish 

INSTRUCTIONS:

1. Put 1 teaspoon of oil in a wok or large skillet and turn the heat to high. When it begins to shimmer, add the cooked pork roll and BBQ pork. Stir occasionally until it starts to brown, about 1 minute. Slide it to the side.

2. Add the rice, breaking up clumps with a wooden spoon as you go along, and toss it with the pork roll and BBQ pork.

3. Add soy sauce and stir constantly until it's coated through and incorporated, about 2 minutes. Slide it to the side and add another teaspoon of oil. Break the eggs into it, scramble, and then stir into the rice.

4. Add the remaining seasoning: chicken bouillon, fried garlic oil, and black pepper. Once again, stir constantly until everything is incorporated. Turn off the heat, stir in the chopped green onion, and serve. You can top it off with fried shallots and sliced cucumber if you like. Enjoy!
